Along the tight squeeze of the rue Saint-Sauveur is the Experimental Cocktail Club—although you wouldn't be the first if you missed their front door—a dark endroit for cocktail aficionados and their exacting bartenders. The fairly authentic speakeasy boasts of one of the most eclectic menus of cocktails on the planet, all agonized over and curated by a team of the greatest mixologist this side of Bonne Nouvelle. Not that you can't order a classic drink: their mastery of the old tried-and-true is beyond reproach, but this isn't the place for a simple martini. With handpicked ingredients all prepared to order, adventure is the drink of the day here, so try something off the beaten path like the Tears and Vinegar—whiskey and balsamic vinaigrette—and Tommy's Margarita Especial, with an improbable 100% agave tequila mixed with honey and infused with bourbon and vanilla.
