Walking past a patisserie specializing in les choux in Paris, Rebecca Tison had an epiphany: New York needed a gourmet cream puff revolution.
Enter Barachou, Tison's love letter to the humble 'chou'. Cream puffs, as the Americans call them, are little known in the United States. Or were. Barachou makes colorful cream puffs reimagined with a distinctly American twist. Find original flavors like peanut butter, strawberries and cream, pistachio, even an Oreo-inspired creation. “The aim is to revisit and offer different flavors almost every week," she says. "Our menu evolves with the seasons and holidays.
